Ama Vadai:
Ingredients required:
Toor dhal:one cup
Urad dhal:Half a cup.
Channa dhal:Half a cup
Ginger :one small piece
Green chillies:Three
Red chillies:Three/four
Asafotita;one teaspoon
Salt :to taste
Grated Coconut:Half a cup
Cashew nuts(optional):50 gms
Oil :to fry the vadas
Curry leaves,a few
How to make:
Take toor dhal and urad dhal together wash several times and soak together in water.Wash the channa dhal similarly and soak separately in a vessel The dhals should be soaked for about two hours.Grate the ginger piece or cut into small pieces and keep aside.Wash and cut the curry leaves into fine pieces.Split the cashew nuts into small sizes and keep aside.Strain the water from the toor dhal and urad dhal,soaked together.Add the ginger,chillies,and salt,grind in the mixi ,into a coarse,thick paste,adding water,little by little.Strain the water from the channa dhal, soaked. Add it to the toor and urad dhal ground into a paste,add the grated coconut,cashew nuts and the curry leaves.Mix very well.Take oil in a kadai and heat it on medium flame.(If the flame is kept high,the vadas may turn brown fast,they wont be cooked inside,the paste will remain uncooked).Take a pan leaf,make the vada mix into small balls,keep a ball on the pan leaf/plastic sheet,press it lightly and put it in the oil to be fried.When the bottom side becomes brown,slowly turn to the other side,remove from the kadai.Repeat the process till all the vadas are made.

They are sounding yummy.
I make these vadas, but do not know that we are not supposed to gring chanadal, and adding cashew is new thing.
I will try your way next time.
